100% Chenin

TERROIR
Clay-sandy soil with sandstone on the surface, on a magnificent hillside overlooking the cellar.

WINEMAKING
Careful selection of healthy grapes through sorting, harvested in crates. Gentle pressing in a pneumatic press and juice selection before settling. First alcoholic fermentation in stainless steel tanks with temperature control between 16–17°C, followed by wine filtration. Bottling and secondary fermentation in the bottle, with a minimum of 12 months ageing on lees to develop aromatic complexity and fine bubbles.

TASTING NOTES
Serve at 5–6°C.

FOOD AND WINE PAIRINGS
Bois Mozé Tradition is an excellent aperitif wine. It pairs beautifully with smoked or grilled fish, as well as desserts made with white fruits, ice creams, and meringue-based pastries.
