A WORD FROM THE WINEMAKERS
Its terroir is the sea! The Piquepoul Blanc has been planted in the Thau Lagoon watershed since the 14th century. A rather lateripening, historic, and emblematic grape variety of the area, it fully expresses itself here. Well adapted to the climate, it maintains a beautiful freshness. It pairs particularly well with the salinity of Bouzigues Oysters, but not only that... Typical of the region: harvested in two stages, one for its liveliness, the other for its complexity.
VINIFICATION Night harvest in two stages, one for freshness and the other for aromas, fermentation at low temperatures, aging on fine lees.
TASTING Bright robe with green reflections, nose on citrus fruits, lime and grapefruit. Balanced and tonic palate, beautiful persistence, slightly atypical. Serve chilled at 10-12°C, perfect with seafood and shellfish, cod fritters, and fish casseroles.
