Pauline Pabiot - AOC Pouilly Fumé Le Coteau 2025 12% 750ML
This Pouilly Fumé is the combination of expression and liveliness par excellence. The clay and limestone reveal a Pouilly Fumé with citrus and floral aromas. Fine, fruity and floral.
Vine Growing
The vines are grown using sustainable viticulture methods, with each operation taking account of the vine and its environment. The estate is certified HVE 3 (high environmental value level 3) and the 2025 vintage is certified organic, after a conversion process that began in 2021.
The clay-limestone soils of Tracy-sur-Loire are found in the hamlet of "les Girarmes" and the localities of "les champs gordé" and "les champs de cris". The soil is worked mechanically to manage weed cover. Practices such as ridging, hoeing and intercepting to manage the grass under the rows ensure that the soil is kept alive. The vines are on average 40 years old, planted at 6,500 stocks per hectare and pruned using the Guyot poussard method. The grapes are harvested mechanically, with an average production of 50 hl/Ha.
Vinification
The harvest date is chosen after tasting the grapes to ensure that all the aromatic and analytical criteria are gathered together. Mechanically harvested, the grapes are pressed and then cold settled. Alcoholic fermentation is carried out partly with indigenous yeasts and partly with bayanus-type yeasts to allow the terroir to express itself. Temperature control is essential for the finesse of the wines. Alcoholic fermentation takes place at low temperature in stainless steel vats. Finally, the wines are matured on their lees until bottling, to ensure that they retain their finesse and distinctive character.
EYE: Pale yellow colour with golden hues.
NOSE: Fresh notes of citrus and flowers such as orange blossom and honeysuckle, followed by notes of white fruit.
PALATE: Lively on the palate, the long-lasting aromas of white fruit and zest are underpinned by a salivating bitterness.
To be enjoyed young, from 2 to 5 years.
