Description
Type: dry fortified / Fino.
Variety and origin: 100% Pedro Ximénez grapes from the finest albariza vineyards of the Sierra de Montilla and Moriles Altos.
Production: Selection of "yema" (first-press) musts, natural fermentation at controlled temperature with no need for fortification.
Ageing: Biological aging under a veil of flor. Criaderas y soleras system over a period of 10 years in American oak casks.
Tasting notes
Appearance: Pale, bright, crystalline.
Aroma: Sharp and intense. Well-balanced. Rich in aldehydes, wood and nuts.
Taste: Dry, slightly bitter. Dried fruit (almond) and toasted flavors. Intense finish and retronasal aftertaste.
Food pairing
Salt-cured foods, cold soups, shellfish, fried fish, Iberian ham. Serve at 8-10 °C , always in a wine glass.
