TERROIR
Clay-limestone soil on a magnificent hillside overlooking the cellar.

WINEMAKING
Careful selection of healthy, ripe grapes through sorting, harvested in crates. Gentle pressing in a pneumatic press. Primary alcoholic fermentation in stainless steel tanks with temperature control. Bottling and secondary fermentation in the bottle, with a minimum of 12 months ageing on lees to develop aromatic complexity and fine bubbles. Disgorgement on demand, with the addition of expedition liqueur to achieve the desired balance of taste.

TASTING NOTES
Serve at 5–6°C.

FOOD AND WINE PAIRINGS
Désirée Anne is recommended for original aperitifs where skewers of red fruits, cherry tomatoes, or melon cubes can replace traditional savoury snacks.
It also pairs perfectly with desserts based on red fruits (soufflés, ice creams), crêpes with red fruit jams, and a wide range of red-fruit pastries (crumbles, tarts, etc.).
